Nest Spring Menu // Patatas Bravas

During my travels all over Spain, I sought out Potatas Bravas at every pinxto/tapas bar I visited. Baked, dried, or roasted potatoes loaded with creamy mayo or cheese, and topped with a spicy sauces, was all I wanted.
Not one for deprivation, I want to share my recipe for this indulgent dish with you. My recipe is not only tasty, but also made with healthy ingredients your body can enjoy.
To begin, you should know that potatoes have tons of benefits despite the bad reputation they’ve gotten over the years for being linked to weight gain. I am happy to tell you that it’s not the potatoes themselves but what you put on them and how you prepare them that one should consider. New potatoes are a prebiotic, which feeds your probiotics which are live organisms that improve gut health. They are a great source of vitamin B6 (pyridoxine), which is involved in red blood cell production as well as liver detoxification, and the maintenance of the nervous system and brain.
Fingerling potatoes (red, purple, and white) contain antioxidants in the pigment of their skin and are a great source of potassium, which regulates nerve cells and muscle contractions. To complement the prebiotics in the potatoes, we use our probiotic cashew cream to support your microbiome. And, it’s vegan so all dietary preferences can enjoy.
