Nest Spring Menu // Forbidden Spring Eat Your Nutrients

In the winter, we naturally gravitate towards heavy foods for insolation so the body can stay warm. The Springs gives us the opportunity to “lighten up” and detox accumulated toxins, excess weight, and internal grime. We have assimilated our favorite veggies in The Forbidden Rice Spring Bowl to support your body in this seasonal detoxification while replenishing you with vitamins, minerals and antioxidants.

The many colors in this dish signify the variety of nutrients and plant polyphenols- antioxidants. We choose carrots for their beta carotene which converts to vitamin A for eyes, skin, immune system, Asparagus for vitamin C, E and K, and glutathione (master antioxidant). Snap peas, English peas, and white beans were included for protein, iron, omega-3 and 6, and fiber to facilitate the elimination process.

Watermelon Radish was added for potassium (nerve signals, fluid balance), calcium (bone formation), magnesium (over 300 enzymatic reactions in the muscle and nerves). We loaded this dish with herbs to help pull out toxins as they are antimicrobial and antibacterial.

Our Pepita Goddess dressing is made up mainly of pumpkin seeds which contain tryptophan, an amino acid essential for brain health and serotonin production- happiness! And this dish would not be the Forbidden Rice Spring Bowl without the forbidden rice which contains antioxidants and fiber!
